Baked Sardines

If you are looking for a simple and healthy summer recipes, this baked sardines would be a great choice. Easy to make, these sardines are ideal light meal which can be served with a bowl of green salad or along any other side-dish. Accompany sardines with homemade flatbreads which is an ideal combination. For this recipe you don't need grill, they are prepared in the oven but still are so delicious.

Topped on toasted bread these sardines make a simple, light meal. Add a squeeze of lemon or some sliced tomatoes for more flavour.

For this easy recipe we need only a few ingredients. Of course, FRESH SARDINES are the star of this recipe. Plus, we need quality olive oil, garlic, parsley and salt and pepper for seasoning.

Fresh sardines are one of the most affordable fish and yet full of omega 3 fatty acids. They are also small, ideal for one bite and quick to prepare. 

Baked Sardines


  • 1kg sardines, scaled and cleaned
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • fresh parsley
  • salt & freshly ground black pepper


  1. Preheat the oven to 200C. Prepare oven-proof baking dish.

  2. Scale sardines using back of knife, working from the tail towards the head. Cut underside of fish and clean sardines inside. Wash fish and pat dry.

  3.  Season sardines inside and out with salt and pepper. Drizzle with olive oil and stir.

  4. Arrange sardines in one layer in the baking dish and drizzle with more olive oil. Bake until sardines are firm and beginning to brown, 15 - 20 minutes. Serve with some grilled bread.
