Do you love spices in the cookies? We adore these aromatic addition to cookies especially when mixed several of them. These simple Christmas star cookies are loaded with spices and are so easy to make. The dough is whipped easily then shaped into stars and baked in the oven. The best thing about these cookies is that they are so easy to make. You can even make a dough and keep in the freezer and bake later.

what spices we use in this recipe

We wanted these cookies to be loaded with spices and we made a nice mix of them. In this recipe we used:

  • GINGER: this spice can be candied, fresh or dried ginger. It is used for sweet and savoury dishes. One of the most popular recipes are gingerbread cookies.

  • CARDAMOM - this spice has lemony taste and is full of vitamins.

  • NUTMEG

  • CLOVES - this rich and sharp spice comes in the form of small pieces which are ground to get spice.

  • BLACK PEPPER - it gives a special aroma to the cookies. We ground it coarsely to get some nice crunch in the cookies (you can do this also in a mortar).

how to make Spiced christmas star cookies

Making these simple festive cookies is quiet simple and easy. For the dough your will need PLAIN FLOUR, BAKING POWDER, BUTTER, BROWN SUGAR, SALT, EGG and SPICES.

For the dough take the following steps:

  1. Combine flour and baking powder in one bowl.

  2. Beat softened butter and brown sugar in another bowl until light and fluffy.

  3. Now add vanilla bean paste and salt and slowly fold in flour/pecan mixture until the dough is formed. The dough is now ready just cool it in the fridge for 30 minutes.

These are decorative festive cookies so we used star cookie cutter. For rolling you will need dusted work surface and rolling pin. It's easier to divide the dough into half the roll out each half separately. Cut out the cookies and arrange on prepared baking tray (you will need to bake in the several batches). Bake for 10 -12 minutes or until the bottoms are lightly brown. Transfer the cookies to wire rack to cool.

MAKES: 24 Cookies
COOKS IN: 1 Hour Plus Cooling Time
LEVEL: Moderate

INGREDIENTS

For the cookies

  • 210g plain flour
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground anis
  • 1/4 teaspoon black pepper
  • 140g butter, softened to room temperature
  • 80g coarse brown sugar
  • 1 mint scented sugar
  • 1 egg, at room temperature
  • 1 pinch of salt
  • 2 teaspoons vanilla bean paste

METHOD

  1. Combine the flour and baking powder in a bowl and set aside.

  2. Using an electric hand mixer, cream the butter and sugar until light and fluffy - 3 - 4 minutes. Add vanilla bean paste and salt and then slowly fold the flour and ground pecans and form a dish from the dough. Wrap into a cling film and place in the fridge for about 30 minutes.

  3. Preheat the oven to 175 C and prepare 2 baking trays by lining them with baking paper. Half the dough leaving half in the fridge.

  4. Roll out the dough on a dusted work surface until 5mm thick. Using a star cookie cutter, cut out the cookies then gather the remaining dough and re-roll and cut again. Repeat with the remaining dough.

  5. Place cookies on the baking tray and bake for 10 - 12 minutes. Allow cookies to cool on the tray for a few minutes then remove to a cooling rack using a thin metal spatula.

  6. To decorate broke the white chocolate bar and place in a small heatproof bowl. Place the bowl over the saucepan of simmering water until completely melted. Leave to cool for a few minutes, then drizzle over the star cookies using a fork.
