Spicy Chicken with aubergines


  • 2 tablespoons olive oil
  • 6 chicken legs and thighs, boneless and skinless
  • 1 large aubergine
  • 1 red onion
  • 2 garlic cloves, minced
  • black pepper
  • fresh parsley


  1. Cut the chicken and aubergine into small piece.

  2. Cut the onion into slices and mince the garlic.

  3. In a large frying pan heat olive oil, then add chicken and aubergines. Fry until aubergines start to soften - for about 5 minutes. Add onion and garlic and fry for another 5 minutes stirring continuously.

  4. Add pepper then fry for another 5 minutes until the chicken start to brown and be completely cooked. Add chopped parsley on the top. Serve immediately.
