Tortelloni with Lemon Garlic Butter Sauce

These simple pasta dish is a great when you want a satisfying dinner on the table in 20 minutes time. It brings vibrant flavour with minimal effort.

Filled pasta has so much flavour on its own, so it doesn't need to be overwhelmed by a powerful sauce. One of the best things to pair pasta such as tortelloni and ravioli is butter. In this recipe the butter is upgraded with lemon and garlic.

This is one of the simplest dishes ever. Just be sure to have some quality fresh pasta from your local food store or even better from true Italian pasta producer known in Italy as pastificio.

There’s nothing quite as comforting as a bowl of fresh, handmade pasta coated in a creamy butter sauce. It’s an incredibly effective and indulgent way to add a burst of flavour as well as a smooth, velvety texture to any pasta dish.

Melted butter clings exceptionally well to the smooth, porous texture of fresh pasta.


Ingredients for this simple tortelloni dish

  • FILLED TORTELLONI: Use fresh tortelloni from the store or even better from traditional Italian producer of pasta. These can be find in many cities in the world.
  • BUTTER: Use quality butter as it's major component of the sauce.
  • GARLIC: Get fresh quality garlic, you will need 1 clove.
  • LEMON: Use organic fresh lemon as you'll be using the zest.

Steps for making tortelloni with lemon garlic butter sauce

  1. COOKING THE PASTA: Cook pasta in a large pot of salted water for 3-4 minutes.

  2. Heat the butter in a large skillet over medium heat, stir in garlic and cook and stir for 30 seconds. Remove from the heat.

  3. Add pasta with some water to the skillet then add lemon zest. Season with salt and pepper and stir to coat tortelloni.

INGREDIENTS

  • 500g fresh tortelloni
  • 60g butter
  • 2 garlic cloves, peeled and crushed
  • zest of 1 small lemon
  • salt & black pepper to season

METHOD

  1. Bring a large pot of salted water to a gentle boil and put in the tortelloni. Cook for 3-4 minutes.

  2. Gently heat the butter in a frying pan together with garlic over medium heat for 30 seconds. Remove from the heat.

  3. Transfer tortelloni to the frying pan using a slotten spoon. Make sure that some of the starchy pasta water makes it into the pan. 

  4. Stir in lemon zest and season to taste with salt and pepper. Transfer to serving bowls or plates and serve.
